A New Chapter in Coffee Innovation
The Iced Cascara Washed process is Aida’s latest and most inventive approach yet. This unique method takes inspiration from her cascara tea, made from the dried outer fruit of coffee cherries.
Here’s how it works:
The dried fruit from previous harvests is brewed into a sweet, strong tea and frozen into ice bricks. These cascara ice bricks are added to the fermentation tanks, lowering the temperature and slowing the process for optimal flavor development. Freshly pulped cherries undergo an 18-hour dry fermentation with the cascara ice before being washed and placed on shaded African drying beds for nine days.
The Result? A Cup Like No Other
This coffee delivers a razor-clean profile with a syrupy body and vibrant flavor notes of tamarind and citrus. It’s a sensory masterpiece that reflects both the artistry and innovation of its creator.
